What Is 'Raw' Honey?
Raw means it’s never been pasteurized or high-pressure filtered. Both processes remove or destroy the many beneficial compounds found in raw natural honey. Commercial producers of honey pasteurize (heat to high temperature) it to prevent it from crystalizing. Many even add corn syrup to reduce their costs.
All natural raw honey will crystallize (granulate) – this is normal and is a good sign that the honey is pure. This does not mean it’s bad, because honey does not spoil. Gently warm the jar in hot tap water to dissolve the crystals without destroying the beneficial compounds.
